The principal cuvee of this Domaine. Based in the Saint-Joseph-en-Beaujolais area of Morgon, Pauline Passot farms 50 year old vines near the house on the family property at Chiroubles at 350m. Density of 9000 vines per hectare.
Extraction is very gentle and half of the fruit is fermented carbonically for six days before being pressed into concrete for seven months maturation.
