100% Mourvèdre from Longhorn Creek, South Australia. The vines are 35 years old and the soils are rich in limestone. Whole bunches were foot stomped before being placed in a 2,000 litre wooden vessel for fermentation. The ferment was gently foot plunged once a day for three weeks before being pressed to 800 litre clay eggs for maturation.
